Pastelitos de Pescado
Ingredients:
4 cups flour
12 tablespoons butter
4 eggs yolks
1 tsp. sugar
1 tsp. salt
Procedure on how to make Pastelitos de Pescado:
1. Sift the flour, salt and sugar.
2. Work in the butter with tips of the fingers and fold in the well-beaten yolks of 4 eggs.
3. Sprinkle with enough cold water to bring the mass together and work very lightly with the fingers.
4. Place the dough on a floured board and roll to about 1/8 inch thick.
5. Cut into 2 equal parts.
6. On one part spread evenly the filling, made as follows:
1 onion, chopped fine
2 tomatoes, roasted, skin and seed removed and chopped fine
2 cups flaked fish
3 Vienna sausage, chopped fine
4 tablespoons grated cheese
4 tablespoons chopped ham
Salt and pepper to taste
1. Saute the onion and tomato in butter.
2. Add the fish, sausage and ham and cook 3 minutes longer.
3. Then add the grated cheese.
4. Season to taste.
5. Cover with the other sheet of dough rolled out to 1/3 inch thick, and press gently with a rolling pin.
6. Cut in rectangles 3 inches long and 1 inch wide.
7. Place in a buttered and floured pan, brush with lightly beaten yolks of eggs, and bake in a moderate oven until brown.
